Try this 3-Ingredient Vegan Caramel made with dates. Perfect for spreading, dipping or incorporating into your favorite recipes!
Caramel usually consists of melting sugar and butter among other things to create a creamy, sweet spread. This recipe is a healthier variety made using only dates, water and pure vanilla extract. Even though this recipe is minimal in ingredients it is not minimal in deliciousness!
You may be wondering what you can do with this caramel? The options are limitless! It can be used for dipping fruits and other goodies, spreading on toast or other desserts such as Vegan Cinnamon Buns. It can also be incorporated into your favorite baked goods and Vegan Ice Cream.

How to Make this 3-Ingredient Vegan Caramel:
Start by soaking some dates in boiling water for minimum 5 minutes. Drain and remove pits if necessary, then add to a food processor with water and vanilla and blend until thick and creamy. The caramel can be eaten just like this or can be added to a saucepan to thicken up even further, and who doesn’t love warm caramel?!
Storage:
To store any extra or to consume at a later time, store in the fridge in an air-tight container for up to 3 days.

Ingredients
1 cup Medjool Dates (pitted)
3/4 cup Water (room temperature)
1/2 tsp Pure Vanilla Extract
Directions
- Place dates in a bowl and pour boiling water overtop, enough to cover all the dates. Let sit for a minimum of 5 minutes.
- Drain water (remove pits if necessary) and place dates in a food processor. Slowey add water while blending dates on low until a thick and smooth texture is formed. Add vanilla and blend again to incorporate.
- Heat mixture in a small pot on the stovetop at medium heat, stirring regularly. Continue cook for 10-15 minutes to reduce the caramel even further.
- Remove from heat and serve immediately or let cool for later use.
