Vegan Peanut Butter Cups

Vegan Peanut Butter Cups are simple to make and only require 3 ingredients. They are a rich, nostalgic and easy dessert!

These Vegan Peanut Butter Cups are one of my favorite desserts, they are so easy to make and bring me right back to my childhood, when I was wolfing down packs of Reese’s cups.

I was never into candy and gummies. chocolate was always my thing and still is. I can never pass up a super chocolaty Vegan Dessert!

The great thing about these cups is that they have all the goodness without the junk- just 3 simple and healthy ingredients! I usually always have these ingredients in my house so I can always whip them up when I have a craving.

How to Make Vegan Peanut Butter Cups

To start, fill a standard size cupcake pan with liners. This recipe will make approximately 10 vegan peanut butter cups. You will need a spatula, two separate glass bowls and a pot of water. You can also make this recipe even quicker by melting the chocolate and peanut butter in the microwave. I personally prefer the stovetop method. For melting on the stove simply add chocolate and coconut oil into a glass bowl and place overtop of a pot of boiling water. Continue to stir until chocolate is fully melted and smooth.

All you have to do next is layer the melted chocolate with the melted peanut butter and then freeze for 45 minutes! We cool them layer by layer so that they don’t all mix together. And that’s it!

Storage: Once they have set in the freezer, store in a container with a lid in the fridge and snack on them as you please, they will keep for days!

Vegan Peanut Butter Cups

Ingredients

  • 300g Vegan Dark Chocolate or Semi Sweet Chocolate (around 1 1/2 cups)

  • 2 tbsp Coconut Oil

  • 3/4 cup Natural Peanut Butter

Directions

  • Add 10 standard cupcake liners to a 12 slot muffin pan. Set aside. Your also going to want to make some room to fit this pan in your freezer.
  • Add half the chocolate and half the coconut oil to a glass bowl. Either heat in the microwave or stovetop over boiling water until completely melted and smooth.
  • Evenly distribute the chocolate into your liners (a little less than 1 tbsp). This will be your first layer. Place in the freezer for 15 minutes to cool.
  • Remove tray from freezer. Set aside.
  • If your peanut butter has been refrigerated previously, heat until melty and smooth. Evenly distribute approx. 1 tbsp into each liner. This will be your middle layer. Return to the freezer for 15 minutes.
  • Melt the remaining chocolate and coconut oil together until smooth. Remove tray from the freezer and evenly distribute the last layer. Return to the freezer and let set for 30-45 minutes.
  • Once set you can consume immediately or store in the refrigerator to munch on as you please. Serve with a big glass of nut milk!! Enjoy
