No-Bake Vegan Brownie Bars

Fudgy, super rich and chocolaty No-Bake Vegan Brownie Bars. These Brownies are super healthy and packed with nutritious sources of protein. Come on and take a bite!

Who doesn’t love a good Brownie? If you’re a brownie lover like me than this recipe is for you. This recipe is a twist on traditional brownies, that’s why I call them Brownie Bars. The base is the brownie with a thick and velvety layer of chocolate on top. These No-Bake Vegan Brownie Bars are SUPER healthy but don’t taste like it! Made primarily with oats and chickpeas and naturally sweetened. They are also naturally gluten-free and pack in about 5 grams of protein each, making them and indulgent treat on the go that will keep you satiated and full of energy.

There is something that excites me so much about making a mouth-watering dessert that I can feel good about eating.

Here’s How to Make No-Bake Vegan Brownie Bars:

Add soaked and cooked or canned chickpeas to a food processor with oat flour, cocoa powder, vanilla and maple syrup. Slowly add plant milk while blending until a thick brownie batter is formed. Distribute the brownie batter evenly into an 8×8 dish lined with parchment paper and refrigerate while you make the chocolate topping. To make the chocolate topping simply melt (either on the stove or in the microwave) dark chocolate, natural peanut butter, and coconut oil until smooth. Remove brownies from the fridge and pour this silky mixture overtop. Place in the freezer for 20 minutes, or until chocolate is solidified. Remove brownies from the dish by lifting out the parchment paper, transfer onto a cutting board and cut with a large sharp knife into 9-12 individual brownies. Enjoy!

Storage: Store these brownies in the fridge in an air tight container for 3 days.

No Bake GF, Vegan Brownie Bars

Ingredients

  • 2 cups Chickpeas

  • 1/4 cup Cocoa Powder

  • 1/2 cup Maple Syrup

  • 1/2 cup Oat Flour

  • 1 tsp Pure Vanilla Extract

  • 1/4 cup Plant Milk

  • Chocolate Topping
  • 1 cup Dark Chocolate Chips

  • 1/4 cup Natural Peanut Butter (salted or unsalted)

  • 1 tbsp Coconut Oil

Directions

  • In a food processor combine chickpeas, cocoa powder, oat flour, vanilla and maple syrup, begin to pulse and slowly add plant milk until a thick brownie batter forms.
  • Add mixture to an 8×8 baking dish lined with parchment paper. Refrigerate while making chocolate topping.
  • To make the chocolate topping combine all ingredients in a medium size bowl and melt in the microwave or stove top until smooth.
  • Remove dish from the refrigerator and evenly pour the chocolate mixture over top. Place in the freezer for 20 minutes or until the chocolate has hardened.
  • Remove brownies from the tray, using the parchment paper to lift them out. Place on a large cutting board and cut into 9-12 individual bars. Enjoy!
