Fudgy Protein Brownie Balls

These Vegan Fudgy Protein Brownie Balls are the perfect snack or healthy dessert option. They are also very kid-friendly and would do amazing packed into little lunch boxes! Easy to make, vegan, high in protein, gluten-free, and naturally sweetened with dates. Best of all they are super decadent and tasty!

Do you find yourself having a little bit of a lull in the early afternoon and need a pick me up? These Brownie Balls are perfectly portioned so that just two will give you a whole 8 grams of protein. They have tons of B-vitamins to keep your brain working, and a whole bunch of essential minerals, such as potassium and phosphorus that will help you power through the rest of the day.

When I came up with this recipe I thought it was too good to be true, but here you have it! The perfect healthy and indulgent snack. I know I will be making these time and time again.

How to Make Fudgy Protein Brownie Balls:

The ingredients are simple. Dates, almond meal, oat flour, cocoa powder, vanilla, and mini vegan chocolate chips. Start by boiling the dates for 5 minutes to soften and remove pits, then simply blend in a food processor until a paste is formed, then add the cocoa powder and vanilla and blend again to combine. Transfer into a mixing bowl and fold in the almond meal, flour and chocolate chips.

Form into 1 inch round balls and refrigerate for 30 minutes prior to eating.

Storage: Store in the refrigerator in an airtight container for 3 days. They can also be frozen and thawed.

Easy to make No-bake, vegan and gluten-free Fudgy Protein Brownie Balls

Ingredients

  • 13 Madjool Dates

  • 1 tsp Pure Vanilla Extract

  • 1/4 cup Cocoa Powder

  • 2-3 tbsp Water

  • 3/4 cup Almond Meal

  • 3/4 cup Oat Flour

  • 1/4 cup Vegan Chocolate Chips

Directions

  • In a small pot, cover dates with water and boil for 5 minutes until soft. Strain, let cool and remove the pits.
  • In a food processor, blend dates with water until a smooth paste has formed. Add cocoa powder and vanilla. Pulse until incorporated.
  • Transfer mixture into a large mixing bowl, fold in the almond meal and oat flour until a thick batter has formed. Then fold in the chocolate chips.
  • Using your hands, form 10-12 1 inch round balls. Place on a sheet with parchment paper as you go. Transfer balls into an air-tight container. Place in the refrigerator for 30 minutes before consuming.
