Easy Sesame Udon Noodles

You heard right! This dish only takes 10 minutes to make. Yummy food doesn’t have to take loads of time to make! Udon noodles are probably one of my favorites. They are thick, soft, and perfectly chewy. I have played around with many Udon noodle recipes but this is my new favorite. This dish has a stir-fry vibe because you can add any type of sautéed veggie and protein you like. I personally enjoy pairing it with baked tofu and sometimes adding a bit of sriracha for a little kick.

Salty, sweet, and comforting, this dish will have you coming back for more. The simplicity, versatility, and ease of this recipe make it a great weeknight dish. Even the kids will like it!

How to Make these Easy Sesame Udon Noodles

First things first, you need Udon Noodles. There are different varieties but I like the pre-packaged ones. They are easy to use, all you have to do is plop them in some boiling water for 3 minutes and then add to your favorite dish.

This recipe has four easy steps:

  1. Sautee your favorite veggies
  2. Make the sauce
  3. Cook Udon Noodles
  4. Add everything together in a sauce pan

Option add-ins:

  • Bell Peppers
  • Mushrooms
  • Carrots
  • Cabbage
  • Bean Sprouts
  • Snow/Snap Peas
  • Green Onions
  • Vegan Chicken
  • Tofu
  • Sesame Seeds

Storage: Store in the refrigerator in an air-tight container for two days. Re-heat on the stovetop or microwave.

Quick and Easy Udon Noodle Stir-fry

Ingredients

  • 2 Single Udon Noodle Packages

  • 2 cups Chopped Veggies of Choice

  • 1 tbsp Cooking Oil

  • Sesame Seeds (topping)

  • Sauce
  • 1/2 stick Grated Ginger

  • 1 Clove of Grated Garlic

  • 1/4 tsp Toasted Sesame Seed Oil

  • 1 tbsp Maple Syrup

  • 1 tbsp Dark Soy Sauce

  • 3 tbsp Soy Sauce or Tamari

Directions

  • Prepare and slice vegetables.
  • In a large pan, heat oil on medium-high heat. Add vegetables and reduce heat to low, continuing to sauté until desired softness is reached.
  • While the vegetables are cooking prepare the sauce by combining all the ingredients and whisking together. Set to the side.
  • Cook udon noodles according to package instructions.
  • Once the vegetables are cooked add the udon noodles and sauce to the pan and continue to sauté for 1-2 minutes until everything is well combined.
  • Serve immediately topped with sesame seeds (optional) and your choice of protein.
