I often make a large batch of this and keep it in the fridge to add to meals as a great source of vitamins. It’s a super easy meal prep recipe that keeps well and retains its flavor, even after reheating. I specifically make this recipe because beets aren’t a huge favorite in our household, but when combined with sweet potatoes and some other ingredients they make the beets taste delicious! It also offers a great dish for potlucks or gatherings. What’s even better is that it has so minimal ingredients, the majority of the flavors come out in baking, making this an easy dish to throw together for those busy weeknights.

How to make The Best Roasted Beets and Sweets
We like to use either avocado oil or coconut oil for roasting in this recipe. Other than that all that is required is to chop up your beets and sweet potatoes, and add them to a baking dish with your oil, some maple syrup, and cinnamon. Bake for 30 minutes and you’re done!
Optional Toppings:
- Chopped Kale
- Vegan Feta
- Pecans or other nuts
- Parsley
- Other Roasted Vegetables like Brussels
Storage: Cool slightly, then store in an air-tight container in the fridge for up to 3 days. Reheat on the stovetop, oven, or microwave.

Ingredients
3 Beets
2 Sweet Potatoes
1 tbsp Oil
1 1/2 tbsp Maple Syrup
1 tsp Cinnamon
Directions
- Pre heat oven to 400 degrees.
- Peel and chop beets and sweet potatoes into bite-size pieces. (the smaller the faster they will cook)
- Place in a glass or ceramic baking dish and drizzle with oil, maple syrup, and cinnamon. Give it a good mix.
- Bake in the oven for approximately 30 minutes, checking regularly with a fork for doneness.
- Serve alongside your favorite dish.
