- Olive Oil
- Rotini Pasta
- Grape Tomatoes
- Zucchini
- Garlic
- Italian Seasoning
- Vegetable Broth
- Fresh Basil
- Salt and Pepper

Ingredients
1 tbsp Cooking Oil
3 cloves of Garlic
1 Zucchini – sliced into thick moons
200g Grape Tomatoes
1 tbsp Italian Seasoning
340g Rotini
2 – 2 1/2 cups Vegetable Broth
Fresh Basil
Directions
- In a large deep dish pan or pot, heat oil before adding the garlic, tomatoes and zucchini. Cook for a few minutes until slightly softened.
- Stir in Italian seasoning, salt, and pepper before adding the dry Rotini and broth. The broth should just cover the noodles; if it doesn’t, add more.
- Cover and let cook for 20 minutes. The broth should be mostly absorbed into the pasta, and the noodles are soft.
- Serve topped with thinly chopped fresh basil.
