What You’ll Need:

  • Olive Oil
  • Rotini Pasta
  • Grape Tomatoes
  • Zucchini
  • Garlic
  • Italian Seasoning
  • Vegetable Broth
  • Fresh Basil
  • Salt and Pepper

This recipe is so simple. All you have to do is saute the veggies with garlic. Then, add the seasoning. Next, add the pasta and broth. Cover and simmer for 20 minutes before topping with fresh basil.

Ingredients

  • 1 tbsp Cooking Oil

  • 3 cloves of Garlic

  • 1 Zucchini – sliced into thick moons

  • 200g Grape Tomatoes

  • 1 tbsp Italian Seasoning

  • 340g Rotini

  • 2 – 2 1/2 cups Vegetable Broth

  • Fresh Basil

Directions

  • In a large deep dish pan or pot, heat oil before adding the garlic, tomatoes and zucchini. Cook for a few minutes until slightly softened.
  • Stir in Italian seasoning, salt, and pepper before adding the dry Rotini and broth. The broth should just cover the noodles; if it doesn’t, add more.
  • Cover and let cook for 20 minutes. The broth should be mostly absorbed into the pasta, and the noodles are soft.
  • Serve topped with thinly chopped fresh basil.
