Ingredients
1 large butternut squash
2 tbsp Maple Syrup
1 tsp Cinnamon
1 container of Vegan Cream Cheese
1/2 cup fresh Herbs (chopped)
Directions
- Heat oven to 400 degrees F.
- Peel and cube butternut squash. Place in a large bowl and toss with maple syrup and cinnamon.
- Line a baking dish with parchment paper. Evenly distribute the squash on the baking sheet. Bake for 20 minutes or until nice and golden and fork-soft.
- In a mixing bowl or stand mixer whip the cream cheese until light and fluffy, fold in fresh herbs.
- Spread a layer of the cream cheese mixture onto a serving dish or individual plates. Top with roasted squash and any more fresh herbs.
- Serve and enjoy!
