This is the perfect time of year for corn, and as summer winds down, I want to get as much in as possible! I just can’t get enough of the sweet and crisp flavor of corn straight off the cobb, something I crave year round.
The flavor combinations in this dish make the corn the star while including other nutritious veggies and herbs. Keep reading and ill tell you exactly how to make it!

How to Make this Corn and Black Bean Salad
Ingredients for your grocery list:
- 4 Corn on the Cobb
- 1 large can Black Beans
- Red Onion
- 1 Bell Pepper (red or orange)
- Fresh Cilantro
- Avocado Oil
- Cumin
- Salt and Pepper
Optional Add-ins:
- Avocado Chunks
- Grape Tomatoes
- Vegan Feta
- Lime
This recipe is as easy as it gets. Simply dice the onion, and red pepper and combine in a large bowl with black beans, cooked corn (then cooled) cut from the cobb, chopped cilantro, oil and spices! Give it a nice big stir and it’s ready to serve!

Ingredients
4 Corn on the Cobb (cooked and shaved off cobb)
1 large can Black Beans
1 Red or Orange Bell Pepper
1 Small Red Onion
1/2 cup Fresh Cilantro (chopped)
1 tbsp Avocado Oil
1 tsp Cumin
Salt and Pepper to Taste
Directions
- Start by shucking the corn. Place in a large pot of boiling water and cook for 4 mins. Remove from water and let cool.
- In a large bowl add diced red onion, bell pepper, chopped cilantro and drained, rinsed and dried black beans. Set to the side.
- Once the corn has cooled place upright on a cutting board and carefully run a knife down the sides to cut off the kernels. Once all the kernels are removed, add them to your bowl.
- Finally, add the oil and seasonings. Toss well and serve immediately or store in the refrigerator in an air tight container.
