Easy Cold Soba Noodle Salad Recipe

Happy Monday! If you’re like me, when you don’t plan for weekday lunches they are thoughtless and not very nutritious. I like to prep some quick and healthy lunches. I know they will fill me up. They also give me energy to tackle the rest of the day!

Thankfully this recipe is one that I pull out regularly and always keeps me satisfied. It’s veggie-packed, creamy and easy to throw together. The entire recipe will make enough for 4 days worth of lunches.

The sweet, savory, and spicy dressing perfectly coats the soba noodles and can be easily modified to your personal liking. For example, adding more Sriracha for more spice or less agave for less sweetness. Most of the ingredients in this recipe are simple. You probably already have them as staples in your home, if not they are easy to find in-store.

Let’s make it!

Mix the sauce ingredients, and toss in your thinly chopped vegetables, edamame beans, and noodles. Eat right away or store in the fridge for up to 4 days. This recipe is served cold which makes it even easier to eat on the go!

Possible Additions:

Firm tofu or a vegan chicken substitute are good options to add to this salad. Top with something crunchy like crushed peanuts, crispy onions or sesame seeds.

Considerations: If you are gluten-free you can use rice noodles instead of soba and Tamari instead of Soy Sauce. You can easily swap out the soy sauce Coconut Amino and nix the edamame beans for a soy-free choice.

Easy Soba Noodle Salad Recipe

Equipment

  • 1 Cutting Board
  • 1 Chopping Knife
  • 1 Large Salad Bowl

Ingredients
  

  • 2 bundles Soba Noodles cooked and cooled
  • 1 cup Red Cabbage sliced thin
  • 1 cup Carrots Julienne
  • 3 ea Green Onion Sliced long and thin
  • 1 cup Edamame Beans Defrosted

Sauce

  • 3 tbsp Natural Smooth Peanut Butter
  • 1/4 cup Soy Sauce
  • 2-3 tbsp Maple Syrup or Agave
  • 1-2 tbsp Sriracha more for extra spice
  • Juice of half a Lime

Instructions
 

  • In a large salad bowl, assemble and whisk all sauce ingredients.
  • Meanwhile, cook Soba Noodles according to package, rinse with cold water and allow to cool.
  • Chop all of the vegetables, add them into your salad bowl with the soba noodles and edamame beans.
  • Toss until all ingredients are well coated. Serve
