Easy Soba Noodle Salad Recipe

1 Large Salad Bowl
- 2 bundles Soba Noodles cooked and cooled
- 1 cup Red Cabbage sliced thin
- 1 cup Carrots Julienne
- 3 ea Green Onion Sliced long and thin
- 1 cup Edamame Beans Defrosted
Sauce
- 3 tbsp Natural Smooth Peanut Butter
- 1/4 cup Soy Sauce
- 2-3 tbsp Maple Syrup or Agave
- 1-2 tbsp Sriracha more for extra spice
- Juice of half a Lime
In a large salad bowl, assemble and whisk all sauce ingredients.
Meanwhile, cook Soba Noodles according to package, rinse with cold water and allow to cool.
Chop all of the vegetables, add them into your salad bowl with the soba noodles and edamame beans.
Toss until all ingredients are well coated. Serve
