Frozen Yogurt Granola Cups

These minimal ingredient Frozen Yogurt Granola Cups make for a deliciously healthy snack or breakfast on the go!

What’s a better way to cool off this summer than with these healthy Frozen Yogurt Granola Cups! Made with thick and creamy Vegan Greek Yogurt and deliciously sweet berries. Make them ahead of time and pop them out of the freezer anytime you need a nutritious snack! This recipe is quick and requires no baking and no fancy devices, just a food processor and some muffin tins. Customize this recipe however you like by switching up the fruit, adding more or less sweetener, or your favorite yogurt brand. Read ahead and ill tell you just how simple this treat is to make!

Ingredients and Possible Substitutions for Frozen Yogurt Granola Cups

  • Fruit- The fruit is blended with the yogurt in this recipe. Feel free to leave it chunky and stir in whichever fruit you like. Both fresh and frozen fruit will work in this recipe.
  • Sweetener- the granola base is sweetened in this recipe but the yogurt is optional. You may wish to add additional sweetener if you are working with plain yogurt.
  • Granola- the granola base is made with regular plain oats (quick or rolled will work), dates, peanut butter, and vanilla. This base can also be switched up to change the flavor, but keep the measurements the same to achieve the same consistency so that it does not crumble. For example, switch out the peanut butter for different nut butter, use a different extract, or add a touch of cocoa powder.
  • Toppings- this is optional. This can include extra fruit, coconut flakes, nuts, and seeds, or a drizzle of nut butter or chocolate.

How to Make:

For this recipe, you will need a food processor, a small pot, a mixing bowl, and a muffin tin with liners. The first step is to soften the dates- this is optional but I find it makes them easier to work with. To soften the dates boil them on the stovetop for 5 minutes (let cool and remove the pits if they have pits). Next, add all the granola ingredients to your food processor. Process until all the ingredients are well incorporated. Distribute the granola into you tins as the base layer. Combine the yogurt and fruits and add this as your top layer. Freeze for 2 hours.

A delicious Vegan Frozen Yogurt Treat

Ingredients

  • 1 1/2 Vegan Greek Yogurt

  • 1 cup Fresh or Frozen Fruit

  • 1-2 tbsp Maple Syrup or Agave (optional)

  • Granola Base
  • 1 cup Quick or Rolled Oats

  • 5 Dates

  • 3/4 cup Nut Butter

  • 1/2 tsp Pure Vanilla Extract

Directions

  • Boil dates for 5 minutes. Let cool and remove pits
  • Add all the granola ingredients to a food processor and blend until well incorporated
  • In a muffin tin with liners, distribute granola as the base layer, and press the granola down firmly.
  • Mix together fruit, yogurt, and sweetener in a small bowl (blending optional). Evenly distribute the yogurt mixture on top of the granola layer.
  • Freeze for 2 hours before consuming.
