This Vegan Chopped Deli Salad is loaded with veggies, vegan mozzarella, vegan salami and homemade Italian dressing. Combining the classic elements of an Italian sub but turned inside out! This salad is highly customizable, allowing you to add your favorite vegan meats, cheeses and veggies. Its easy to prepare and the perfect option for a quick lunch or to bring to an event.

How to Make this Vegan Chopped Deli Salad Recipe:

Finely chopped is the key! Chop up your lettuce, onion, red peppers and deli meat, add to a bowl with shredded vegan mozzarella and black olives. Drizzle with a simple homemade Italian dressing and give it a quick toss and its done!

Ingredients:

  • Iceberg or Romaine Lettuce
  • Red Pepper
  • Red Onion
  • Vegan Mozzarella
  • Vegan Salami
  • Black Olives
  • Olive Oil
  • Red Wine Vinegar
  • Sugar
  • Dijon Mustard
  • Dried Oregano
  • Salt and Pepper

Substitutions:

  • Lettuce: This recipe calls for Iceberg lettuce but you can use your favorite, Romaine is a good alternative.
  • Deli Slices: Vegan Salami is good here but any will do
  • Olives: You can swap out the olives all together or you can use pickled peppers or both!
  • Vegan Mozzarella: I like the mildness of Mozzarella but any vegan shredded cheese will do.

Ingredients

  • 1 head Iceberg Lettuce

  • 1 Red Onion

  • 1 Red Pepper

  • 1 cup Vegan Mozzarella

  • 3/4 cup Black Olives

  • 1/2 package of Vegan Salami

  • Italian Dressing
  • 1/4 cup Olive Oil

  • 1 tbsp Red Wine Vinegar

  • 3/4 tsp Sugar

  • 2 tbsp Dijon Mustard

  • 1/2 tsp Oregano

  • Salt and Pepper

Directions

  • Finely Chop all vegetables including lettuce
  • Assemble all salad ingredients into a large bowl
  • Make you salad dressing by whisking all ingredients together
  • Pour dressing over top of the assembled salad and give it a good toss
