Sweet and Spicy Edamame Toast

Sweet and Spicy Edamame Toast is a unique breakfast or lunch option that will leave your mouth singing!

The inspiration for this dish comes from a delicious sweet and spicy green bean dish from one of my favorite restaurants. I have always been a huge fan of the sweet and spicy combination so I decided to turn it into this toast topper!

As you can probably tell from my recipes, I’m not a big fan of tomatoes unless they are in a sauce. This was one of my first recipes with whole tomatoes that I didn’t have to pick out or cut into smaller pieces to enjoy. The texture combination of the edamame beans with the soft wilted tomatoes is heaven in the mouth. The flavors in this recipe are mostly sweet without being over-powering and it has a slight kick of spice. This dish also works wonderfully as a side dish if you prefer not to have it on toast.

How to Make Sweet and Spicy Edamame Toast

Even better, this dish is SUPER EASY to make! For this recipe I use shelled frozen edamame beans and fresh cherry tomatoes.

The cherry tomatoes are cut in halves and roasted on medium heat with toasted sesame seed oil, and garlic, allowing them to wilt down. The edamame beans are added next along with a dash of chili flakes. The chili flakes give it a nice kick. If you want more spice then add more chili flakes to your preference.

For the toast, I prefer to use a vegan sourdough to give it a nice crunch. Drizzle with a small amount of oil before placing it in a hot oven to brown. Spread on your favorite hummus and then generously pile on your edamame bean mixture.

This is one of my favorites healthy meals! There is something about this dish that makes me feel like I am treating myself to something special.

Ingredients
  

  • 3/4 cup Edamame Beans frozen, shelled
  • 1/2 cup Cherry Tomatoes halves
  • 1 tsp Toasted Sesame Seed Oil
  • 1 clove garlic crushed
  • 1 tbsp Agave
  • 1/4 tsp Chili Flakes more to taste
  • 1 tsp Sesame Seeds

Instructions
 

  • Heat oil in a medium size sauce pan, add crushed garlic and cherry tomatoes. Cook until slightly wilted (about 5 minutes).
  • Next, add the edamame beans, agave and chili flakes. Cook for an additional 5 minutes, stirring regularly.
  • Spread out a layer of your favorite hummus on a piece of toasted sourdough bread and top with edamame mixture and a sprinkle of sesame seeds.
